This is how cooked Isomalt sugar starts out after boil and color... from here it is pulled until it acquires the shine and plasticity needed to start creating your pieces. Needles to say IT IS VERY HOT!!!!! after a few days of working with it I thought I was so used to the amount of heat that I went ahead and decided to pull it bare handed OHHH NOOO!!!! was I wrong I ended with a huge blister on my left thumb... not funny! of course I noticed/felt I was burned after the class was over in the mean time because of the heat I couldn't tell I was cooking my hands! LOL LOL LOL Don't try at HOME! LOL / For good cotton gloves to protect your hands visit the spa section on the grocery store or in "Bath and Body Works" and look for those nice cotton gloves used for hand spa treatment they work wonderful! they are the perfect thickness to save your little hands.

Magic!
These are magical cookies indeed!!! one because they disappear before your eyes before you can say: "who wants another one" and second because they bring any guy you give’em to, to their knees! PROVEN spell (recipe) just ask! LOL :)
CAJETA or Dulce de Leche / Magical filling of my childhood!!! As a child I used to sit in the table of the kitchen where these where been made and I would patiently wait until my mom or my nanny who would help make'em get distracted and I would gulp on a spoon full of cajeta� of course after that I was kicked out of the kitchen BUT NOT FOR LONG!!!! LOL

She has made for us some nice Summer Fruit Salad and a Potato salad which her husband swears is the best!!! This pic is back from april the pic was taken with my camera phone so it is not the best but never the less the food was SUPER the empanadas are meat and potato filled with a crispy skin...the salad was very fresh with a nice misterious dressing. The sauces you see above the plate where to die for!!!!! tangy comb. of vinegar, tomato + shallots plus other stuff ??? Either way it is worth a visit specialy on weekend nights the place is packed with a rythm filled crowd that came not only for the good food but to dance! It's a small, intimate restaurant and nightclub with blue and green-checkered tablecloths and cozy aqua-colored booths. Live music, dancing and TV viewing gives it a festive atmosphere.
