The blog reached a milestone by reaching 1,000 POSTS!!!! (total 1,055)
Many THANKS to all of those that visit the blog regularly and remind me to keep

Specially to Adriana, Chef Warner, Mitchell Brown and Dolores Kearney.
The blog has been up since November 28, 2004 so this Nov.28th will be its 2nd anniversary!!!!

International Cuisine / Week 6 - Germany



Putting the Linzertorte together...the dough was really crumbly but turned out good! MMM!

Group 1: Zwiebelkuchen (onion tart) / 4 versions of the tart with different cheeses and a vegetarian one.


Group 1: Suss und saure gruene bohnen (sweet and sour green beans)


Group 2: Blaukraut (sweet and sour red cabbage) and Creamy Turnip soup


Group 3: Warmer Kartoffelsalat mit speck (warm potato salad with bacon)


Group 4: Sauerbraten (marinated beef roast)


Group 4: Schweine Fleisch mit Sauerkraut (pork with sauerkraut)


Group 5: Weiner Schnitzel (veal cutlet viennese style)


Group 5: Spaetzel (small noodles like dumplings)

Dessert! LINZERTORTE (spiced dough filled with raspberry preserves) / The dough becomes nice and crumbly and has hazelnuts + cinnamon, cloves and nutmeg! MMM

International Cuisine / Week 5 - Semi Conductor Luncheon



Mitchell on fire!!!! This is good old Mitchell posing after having flambeed our Sauteed Chicken with Kentucky Bourbon sauce.... what you don't know is that the flame was actually much higher than what it looks! it reached well over the fire suppression system! and in the back we had chef Warner urging us to get a LID!!! to cover it up before the system got activated! Who said Culinary school was boring! fortunately nothing happened after this quick snap shot I ran to get a lid and no one got in trouble. LOL : )

THREE-CHOCOLATE BAVAROISE


THREE-CHOCOLATE BAVAROISE by Alison Hodges pastry instructor @ TCC and EL Centro College. This Bavaroise was OUT OF THIS WORLD!!!! chocolate heaven! consisting of a chocolate sponge + creme anglaise base multi layer flavored in Dark Chocolate, Milk Chocolate and White Chocolate.... all topped with more chocolate + whip cream and a sliced strawberryMMMMMMMMMMMMMMM!!!!! CONGRATULATIONS Alison the cake was a HIT!
