TANDOORI

A tandoor is a cylindrical clay oven used in Punjab region,
northern India and Pakistan in which food is cooked over
a hot charcoal fire.
This ovens reach 480°C (900°F). !!!!

The tandoor is currently a very important fixture in many Indian restaurants
even the smallest ones like Star of India have one as you can see on the picture.
What makes this oven so special is the fact that the food cooked in a tandoor
retains all the juices and taste inside and hence is considered very healthy.

Just like a regular oven the tandoori oven can cook from chicken to Indian
breads like roti and naan. On the top picture you can see the cook is placing
a Naan bread with some metals rods that help him reach the walls of the oven
the bread dought sticks to the walls of the oven; Then when the bread is baked
... and this takes only minutes he uses the same rods to remove the bread stuck
to the walls of the tandoori. On the second picture is the Naan Bread from the
Tandoori.
